OK, this is going to be a challenge cuz hollandaise sauce is super fattening, it has butter and egg yolk after all! And check out that ahi with the egg on top! This was so ridiculous I have to make it! This was from the Sea House in Napili Bay Maui... I think I need to go back there soon for this!

INSPIRATION. Ahi skewers over salad

Grilled ahi skewers over a bed of lettuce with a side of chimichurri sauce from my favorite lunch spot in Rancho Santa Margarita, Spike's Fish House. It's already healthy but watch what I can do with this at home! And just cuz it's healthy, doesn't mean it isn't delicious!

And these chicken and waffles from his Sunday Brunch are no exception. I have quite a challenge in re-creating these bad boys to be healthy but I'm always up for a challenge!

Wow! This was incredible! Got it at a stand in Maui- one beef patty, one turkey patty, onions and topped off with a fried egg... wait til you try my version!
